I honestly did not know till the other day that VLC could even convert files. I tried to use HandBrake.

I can't figure out which settings to use. I just spent an hour encoding an episode only for it to not be playable with Quicktime. Is a screenshot of the settings I used in the failed attempt. There seem to be plenty of Windows oriented guides out there, but I want to make sure I'm doing what's best for macOS and I figured you people were the best to ask. I understand anyone who might want to help may need more information.

Yeah, that's for streams, and also for compatibility with multiple device families. What that means to me is that if you stay within those constraints, the odds that you're 'safe' are extremely high.
Playback from local storage on a specific device is no doubt more forgiving. I expect those constraints to be indicative of a strict subset of what will work for local playback.
